Today we are making 3 amazing vegan snacks perfect for after school and work. I always looked forward to a good after school snack when I was in school and I still love making delicious snacks in the afternoons when I am done work for the day to hold me over until dinner.

RECIPES:

Hummus Platter:
sliced carrot & cucumber
hummus
cherry tomatoes, chopped
red onion, sliced
avocado, diced
cracked black pepper

Waffles:
1 vegan “egg” (I use Bob’s Red Mill)
1/3 cup flour
3/4 tsp baking powder
dash of cinnamon
2 tsp sugar
1/3 cup nondairy milk
1 tbsp oil

Make the vegan “egg” and set aside. Combine dry ingredients. Add wet ingredients and stir to make a batter. Spoon into greased waffle iron and cook until golden. Top with Nutiva and sliced strawberries!

Pizza Bagels:
1 bagel
vegan cheese shreds
chopped veggies
pizza sauce OR Thai red curry sauce

Broil in oven for 5 minutes or until cheese is melted.
